pH,heat,proteases influence SOD has a good catalytic performance when pH range from 5.3 to 9.6, SOD can exists steadily when pH range from 4.5 to 11. when pH 3.6, 95% Zn in Cu/Zn-SOD will drop. When pH 12.2, irreversible conformational change of SOD will occur, lead to enzyme inactive. SOD on the thermal stability relate to ionic strength. When the ionic strength is very low, active losses are very less when heated to 95℃. SOD in the gastrointestinal tract in animals with a certain degree of stability, in the acid environment, 37 ℃ keep warm 150min, 81% activity was still residual. In the Pepsin and trypsin environment, activity residual rates were 82% and 84% when keep warm 210min. SOD activity is influenced by the factors such as the beverage color,composition, pH, ethanol content of drinks. Only in colorless, near-neutral, non-alcohol beverages drinks, the SOD activity can be more stable. And organic solvents and Cl have a inhibition of SOD activity.
Security of SOD A large number of tests and clinical application of that SOD has non-toxic to humans except rare allergic reaction.
Exogenous SOD metabolism in animals Clinical application show that an intravenous injection of Bovini Cu/Zn-SOD in healthy volunteers, 1.5h after the administration, plasma levels dropped to the equivalent of 1% of the initial content, it shows that intravenous injection of drug distribution and elimination in the body are very fast. Degradation carried out mainly in the kidney in human body. Preliminary studies have shown that except full macromolecules was absorbed in oral, the degradation of exogenous SOD may also induce endogenous SOD through in animal body, but induced mechanism needs further study.
